‘Pop’ O’Brien credits the luck of the Irish with keeping his mid-western customers coming back to his small family-owned butcher shop. He created the O’Brien’s brand of sausage more than a half-century ago, and by the 1980s, Pop’s grandsons had turned O’Brien’s sausage into easy-to-eat snack sticks. Just a few years later, they were being sold to vending machine operators and retailers throughout the country. Customers of all ages love O’Brien’s snacks for their old-fashioned quality and great meaty flavor.
